Punch-downs What is a Punch-down?

A punch-down is the process by which the berries are physically crushed towards the bottom of the barrel or other vessel. This process relies on the resulting carbon dioxide to bring the must back to the top.  When compared to a pump-over a punch-down tends to be more delicate on the wine while a pump-over helps to give the wine a fuller body with more distinguished texture. Punch-downs require more manpower than do pump-overs as they are a manual process that requires a person’s full attention during its practice.

Our focus in producing Boars’ View is to create the best wine possible that is a reflection of the true Sonoma Coast. Through our research and dedication to our craft we have discovered that the profile that lends itself best to Boars’ View Vineyard is created through the use of pump-overs.
